Start with bright, flavour-packed bites like curry crab mousse on sourdough or smoked red snapper ceviche with coconut and pickled apple. Then dive into mains like seafood paella with mussels and prawns, whole coral trout with asam parrilla, or stuffed squid in rich sugo nero.
